The rule the calculator uses

TemperatureLongest perishable food can sit out
Up to 90°F (32°C)2 hours
Above 90°F (32°C)1 hour

The time adds up across the whole meal. Food on a buffet table for 90 minutes and then in a warm car for 40 minutes has been out for over 2 hours. Perishable food means meat, poultry, fish, eggs, dairy, cooked rice and pasta, cut fruit and cooked leftovers.

Common questions

How long can cooked food sit out?

2 hours at room temperature, or 1 hour if it's above 90°F (32°C). After that, throw it out.

Can I put food in the fridge after it's been out 3 hours?

No. Perishable food that's been out more than 2 hours should be thrown out. Refrigerating it doesn't kill the bacteria that grew.

Do I have to let food cool before putting it in the fridge?

No. Put it in the fridge within 2 hours. Divide large amounts into shallow containers so they cool faster.
